big bowl of chili {yum}

Sometimes, on a cold winter's day, don't you just want a bowl of chili? I sure do. Cozy comfort food. Yes, please! 

This is my favorite chili recipe. I am pretty sure this is a James Beard recipe, though I can't seem to find a recipe of his that matches this one on the internet to link to. But I didn't invent this. My mom got the recipe from a friend of hers, and now I make it too. It is YUMMY. 

Without further ado...
Chili
{ingredients}
3 T. butter or margarine
2 onions, diced
~1 1/2 lbs. ground beef (though I imagine ground chicken or turkey would be good, too!)
1 large can diced tomatoes (~28 oz.)
1 large can tomato sauce (~28 oz.)
1 6 oz. can tomato paste
1/2 cup beer
1 heaping T. chili powder
1 can whole kernel corn
pinch of salt (optional)

{how to}
Melt the butter in a large pot. Add the onions and cook until they are tender, but not brown.
Add ground beef and cook until lightly browned, breaking it up small. Once cooked, remove the pot from the stove to drain the excess fat.

Return to stove and add the tomatoes, tomato sauce, tomato paste, beer, chili powder, and salt. Mix.
Cover and simmer for 45 minutes, stirring occasionally. Add the corn and simmer 15 minutes longer. Feel free to turn on some tunes and enjoy the rest of the beer while the chili cooks. :)

Serve with (optional) sides of sour cream (or greek yogurt for a healthy alternative), diced onion, and shredded cheddar cheese for garnish. This chili pairs well with a nice salad and/or cornbread.

  2. This makes me so hungry!! We have a ton of venison in our freezer, that I've got big plans to make some dee-lic chili...this recipes makes my mouth water and wanna get going on it:)
